Damyang-style "Tteokgalbi" is made by carefully removing the bones from beef short ribs, chopping the meat very finely, and grilling it over charcoal. The result is a soft, tender patty with sweet and juicy flavor in every bite.
Making "Tteokgalbi" takes time and care. First, fresh beef is chopped until sticky, then shaped into round, even patties. The patties are aged for a short time and then grilled slowly over low charcoal heat. While they cook, they’re brushed again and again with oil and sauce to keep them soft and full of flavor.
Long ago in the Joseon Dynasty, "Tteokgalbi" was a luxury dish served at royal banquets for the king. Because it took so much time and care to make, it was only served to important guests or on very special occasions. Today, you can enjoy "Tteokgalbi" at elegant Korean restaurants called "Hanjeongsik." One of the best things to do in Damyang is to try "Tteokgalbi" near "Juknokwon," the beautiful bamboo forest. Try it with "Juktongbap," rice steamed in bamboo that has a gentle forest aroma. You might feel like you’re part of nature.
