When the snow melts and new sprouts push through the soil, Koreans know spring has arrived—not just outside, but right on their plates. They welcome the season with "Sanchae," a variety of wild greens that grow naturally in the mountains. These include pickled garlic leaves, thistles, bitter herbs, dandelions, valerian root, wild parsley, plantain leaves, "Chamnamul," and more. Each one has its own flavor and texture, making every "Sanchae" meal a celebration of spring.
When spring comes to Pyeongchang, its traditional markets and local restaurants are filled with dishes made from freshly picked mountain greens. Every corner is bursting with the colors, scents, and flavors of the season—it's the kind of place where you can truly feel that spring has arrived. One of the best spots to enjoy these greens is "Odaesan Sanchae Baekban Street." Here, you can try "Sanchae" dishes made with wild greens harvested from the slopes of Mt. Odaesan. While you're here, you can also visit the peaceful "Woljeongsa Temple" or take a slow, refreshing walk along the "Seonjae-gil Trail" that runs through the forest. Together, the food and scenery make Pyeongchang a perfect place to enjoy the full experience of spring—with your eyes, your taste buds, and your soul.
"Butterbur" is usually mixed with soybean paste, giving it a deep, earthy flavor. "Durup," or angelica tree shoots, can be blanched or grilled with pork belly—their slightly bitter taste balances out the richness of the meat.
If you want to try many kinds of mountain greens in one meal, go for "Sanchae Bibimbap" or "Sanchae jeongsik," a full-course meal with a table full of wild greens.
